India is renowned for its spicy food and it is often characterized by 'Curry', this is something I realised when I came to America.Even people who donot know much about India seem to have heard the word 'Curry'. But curry is just one kind of dish from the vast list of regional cuisines with widely varying culinary characteristics.It is like a sauce or gravy(thick or thin) flavoured with spices and generally poured over plain cooked rice atleast in SouthIndia(I am not very familiar with many aspects of NorthIndian cuisine).
              Indian cooking varies from region to region with Wheat being the staple food of the NorthIndians and Rice being the staple food of the SouthIndians.A significant percentage of Indians are vegetarians who include a great amount of dairy products in their diet.Even the nonvegetarians(especially hindus) donot eat meat everyday.Hindus donot take meat on auspicious occasions and festivals due to religious beliefs. Meat is never a main menu, it is only a side dish, with various other side dishes to complement the rice or flat breads they take.Hindus donot take Beef and pork is rarely used, Muslims donot eat pork, so lamb, Poultry and fish are more popular among the nonvegetarians of India. Vegetarianism is part and parcel of every Indian's life,and therefore the variety in vegetarian meals are virtually unlimited. The recipes given in this site are mostly vegetarian with a couple of nonvegetarian dishes.Indian vegetarian meals are not limited to salads and steamed vegetables,as you will see in this site.
         Most of the recipes given in this site are simple to make, please donot get frightened when you see a long list of ingredients,they might be a list of vegetables because I love to add lots of vegetables into my dishes. You can alter things to your convinience and avilability of ingredients, after all cooking is an art and it doesnot have very strict rules to follow as long as you donot ruin the dish beyond recognition.Bon Apetite....
